When we've been working all day, the last thing we want to do is slave away cooking dinner when we get home. Microwave Mug Meals have been a massive craze lately, and yes, we're jumping on the wagon. Here are some of our favourite meals, both savoury and sweet, that you can honestly whip up in a couple of minutes and be eating before you would have even preheated the oven!
Macaroni & Cheese
We're a massive fan of Macaroni & Cheese here at Mankind. There isn't much more that is better than carbs and cheese, don't you agree? This Macaroni & Cheese can be whipped up in minutes, and we're sure you'll end up rushing back to the microwave ready to make a second portion. It's that good.
Ingredients:
- 28g pasta
- 175ml cold water
- 4 tablespoons milk
- ¼ teaspoons cornflour
- 4 tablespoons cheddar cheese, grated
- salt and pepper
Method:
Add your pasta to a large microwaveable mug along with the water. Make sure your mug is large, because the water will boil. Microwave for around 4 minutes or until your pasta is fully cooked. Pour out the remaining water before adding your milk, cornflour and cheese. Give it a mix and microwave for a further 60 seconds to create a sauce. Stir, season well and enjoy!
Pizza In A Mug
You might not have believed your eyes when you read this post... but yes, pizza in a mug! Can we just take a minute to fist pump? Not only is this suitable for dinner, but you could even have it for lunch. Dare we even say, for breakfast too? You can customise this pizza and add whatever toppings you desire. The measurements are slightly strange, but this is purely because of the size of the pizza. Perfect portion for one!
Ingredients:
- 4 tablespoons all purpose flour
- ⅛ teaspoon baking powder
- 1/16 teaspoon baking soda
- ⅛ teaspoon salt
- 3 tablespoons milk
- 1 tablespoon olive oil
- 1 tablespoon pizza sauce
- 1 tablespoon shredded mozzarella cheese
- ½ teaspoon dried herbs
- toppings of choice
Method:
Combine your flour, baking powder, baking soda and salt in your microwaveable mug. Give it a mix before adding the milk and oil. Top the mixture with your pizza sauce and spread it evenly across the surface of your batter. Sprinkle the top with your mozzarella, pizza toppings and seasoning before popping in the microwave. We recommend microwaving for around 1 minute and 10 seconds, however keep an eye on it. You're looking for it to rise and for the toppings to start bubbling. That's it, dig in!
Chocolate Brownie
Yes, you read that right, a chocolate brownie in a mug. This recipe takes minutes to prepare and tastes as good as the real thing. There is a fine line before over baking, so we recommend aiming to keep the centre gooey as it acts as a sauce.
Ingredients:
- 2 tablespoons butter, melted
- 2 tablespoons water
- 1⁄4teaspoon vanilla extract
- pinch salt
- 4 tablespoons granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 4 tablespoons all-purpose flour
Method:
In your mug, add the butter, water, vanilla and a pinch of salt. Mix well before adding in your cocoa powder, sugar and flour, then once again giving it a vigorous whisk. Pop it in the microwave and turn it on high for between 60-90 seconds. You want the centre to still be wobbly, so be careful not to overcook. It's honestly that simple, enjoy.
Chocolate Chip Cookie
When you're home, it's dark outside and you're watching your favourite movie, what better to snack on than a cookie? This one takes 30 seconds. Yes, 30 seconds! It's hard to believe that that is all it takes to make an incredibly delicious cookie. You can even add some additional ingredients such as nuts and dried fruit, to pimp it up further.
Ingredients:
- 1 tablespoon unsalted butter
- 1 tablespoon caster sugar
- 1 tablespoon dark brown sugar
- ⅛ teaspoon pure vanilla extract
- pinch salt
- 1 egg yolk
- 3 tablespoons all purpose flour
- 2 tablespoons chocolate chips
Method:
Place your butter in the mug and microwave it until melted. Add your sugar, vanilla and salt, and give it a good stir. Now add your egg yolk and flour, before giving it another mix. You want this to have the same texture as regular cookie dough, so add more flour or milk if you need to change the consistency. Microwave for around 30-40 seconds until it doesn't look wet on the top of the cookie. Make sure you don't overcook it, because it will become a bit dry. That's it, you're done.
Peanut Butter & Banana Cake
We love this recipe at Mankind. What makes it even better is that it's completely gluten and dairy free! This Peanut Butter & Banana Cake is super moist, tastes amazing and cooks in less than a minute. What's not to love?
Ingredients:
- ½ medium banana, mashed
- 1 tablespoon peanut butter
- 1 egg white
- ¼ teaspoon vanilla extract
- 4 ½ tablespoons oat flour
- ¼ teaspoon cinnamon
- ¼ teaspoon baking powder
- pinch of salt
Method:
Mash your banana in a large microwaveable mug, before mixing in the peanut butter, egg white and vanilla. Once combined, add your flour, cinnamon, baking powder and salt. Give it another mix, before placing into the microwave for 45-60 seconds until it's firm in the middle. You could garnish this dessert with some cream and sliced bananas if you're feeling particularly fancy.
